Salads that Stand Alone

Salad for dinner? Absolutely! In this 75-minute livestream class, we’ll make two substantial dinner salads, an updated take on the Italian deli salad, chock full of fennel, mushrooms, parmesan and salami, and a vegetarian zucchini and chickpea salad enriched with a creamy tahini dressing. As we make each, we’ll break them apart to single out mini-lessons that you can apply to all of your cooking. The deli salad is actually a master class on knife skills and why they matter as well as an illuminating tutorial on vinaigrettes. And the chickpea salad presents opportunities to talk about canned versus dried beans, practice techniques for making the most of our spices, and experiment with the art of plating food. Join Director of Education Rosie Gill to make two salads and learn how to be a better cook.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to the class (or within 48 hours, if you register less than one week in advance), you will receive the list of ingredients and equipment you’ll need to cook along with us, if you choose.
