Mediterranean Mezze with Hanady Nabut

Join guest chef Hanady Nabut, author of “Mediterranea,” for a class where you’ll learn three vegetarian meze dishes that you’ll mix and match at countless meals to come. First, we’ll forego hummus and skip straight to a creamy cannellini bean dip enriched with tangy yogurt and feta cheese. You’ll learn why Hanady likes to serve this kind of dip warm and topped with crispy, caramelized mushrooms. You won’t be able to resist snacking on your dip while we make a plentiful batch of roasted cauliflower and eggplant. These aren’t your standard-issue roasted vegetables, though: they get the star treatment with a generous sprinkle of dukkah—a crunchy combination of nuts, seeds and spices used in Egypt and elsewhere—and spicy, herby, bright green dressing that you’ll want to dunk just about everything in. Finally, we’ll make something akin to a grown-up mozzarella stick: fried halloumi coated in sesame seeds. You’ll learn how to pick good-quality halloumi, the squeaky fresh cheese that lends itself so well to grilling and pan-frying. You’ll learn how to get your coating to stick without a messy multistage dredging process and will make a tart-sweet honey and orange dipping sauce to serve it with. This class is for you if your favorite kind of meal is a gorgeous spread of small bites.

About Hanady: Hanady Nabut is a culinary explorer, food writer, international affairs graduate and researcher with a passion for travel, storytelling, photography and all things food. Having grown up in America to a multicultural family of Palestinian and Spanish/Puerto Rican origins, she has always enjoyed combining flavors of different cuisines to produce unique dishes. This event has limited spots, and you must register in advance via Eventbrite. One sign-up covers one device. Closed Captioning is available for this event.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information. One week prior to class (or within 48 hours of registering, if you sign up less than a week in advance), you will receive an email with the ingredients, equipment and prep you’ll need to cook along with us, if you choose.

After class, you will receive a recording of the event, as well as a folder of recipes and resources that we discuss during the event. Class recordings are available to all registered attendees for two weeks following each event.

Payments for Milk Street live stream classes are non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final. Classes are subject to cancellation at any time. In the case of cancellation by the event organizer, all paid tickets will be fully refunded.
